A place of residential comfort and gracious hospitality nestled in Old Karuizawa
旧軽井沢に佇む、邸宅の寛ぎともてなしの場
Located just beyond the bustling Old Karuizawa Ginza Street, this project transforms a former soba restaurant and the owner’s residence into a new unagi restaurant. While introducing a new identity, the design seeks to preserve the quiet, residential character of the building, creating a place that feels both welcoming and special within Karuizawa’s villa landscape.
The renovation began with a careful respect for the existing structure and its accumulated history. Existing finishes, built-in elements, furniture, and mature trees were retained wherever possible. Oya stone, originally used around the fireplace and flooring, was repurposed as the entrance floor finish, while existing floorboards and countertop materials were dismantled and crafted into new reception counters and benches. Existing furniture was reupholstered and combined with newly introduced pieces, allowing the memory of the building to remain visible within its renewed setting.
On the second floor, the original ceiling was removed to reveal the timber structure, creating a spacious and expressive interior. The exposed framework forms the architectural backbone of the design, with black tones defining the first floor and warm brown tones characterizing the second. Newly added walls and elements are finished in white, emphasizing the dialogue between old and new.
The original residential layout was carefully preserved and reinterpreted to create a variety of dining experiences. Guests can enjoy the craftsmanship of unagi preparation from the counter seats facing the kitchen, relax in private rooms overlooking the tree-lined street, gather around flexible bench seating, or dine in a secluded annex surrounded by forest. Upstairs, seating areas beneath the exposed timber structure offer views into the surrounding woodland, reinforcing the connection to Karuizawa’s natural environment.
By preserving the memory of the existing building while introducing new layers of use and experience, the project creates a restaurant that combines the comfort of a home with the sense of occasion of a destination dining experience.
旧軽井沢銀座の奥に建つ、1階がそば屋、2階が店主住宅であった木造建築を、鰻専門店として再生したプロジェクトです。観光地でありながら別荘文化が息づくこの場所において、商業施設でありながら住宅のような親しみと落ち着きを感じられる空間を目指しました。
改修にあたっては、既存建築が持つ記憶や素材を継承することを重視しています。内外装の仕上げや造作、家具は可能な限り活かし、床や暖炉周りに使われていた大谷石はエントランスの土間へ再利用しました。既存の床板やカウンター材は丁寧に取り外し、レジカウンターやベンチとして再構成し、既存家具も張り地を新調して新たな家具と組み合わせながら活用しています。こうした素材の継承により、建物が積み重ねてきた時間の痕跡を未来へと引き継いでいます。
一方で、2階は既存天井を撤去し、木造骨組みを現した開放的な空間へと刷新しました。1階は黒、2階は茶を基調とした木構造をデザインの骨格とし、新設部分は白を基調とすることで、新旧の対比を際立たせています。また、既存開口部の格子を取り外し、店内の賑わいや温かな灯りが街へと滲み出ることで、周囲の風景と緩やかにつながる表情をつくり出しました。
既存住宅の部屋構成を活かしながら、多様な居場所を計画したことも特徴です。厨房前のカウンター席では職人の手仕事を間近に感じることができ、並木を望む個室では落ち着いた時間を過ごせます。人数に応じて柔軟に利用できるベンチ席や、森に包まれた離れ席、木構造の広がりを感じる2階席など、それぞれに異なる魅力を持つ空間を用意しました。
既存建築の記憶を継承しながら新たな価値を重ね、多様な居場所と自然環境を織り込むことで、自宅のような安心感と特別な食事体験を併せ持つ、軽井沢らしい鰻店を実現しています。
